Housekeeping - 101


Course description: the course is designed to introduce the participants to standard operating procedures and systems in the housekeeping service of today cruise industry. Emphasis is placed on housekeeping organization, chemical and cleaning equipment, passengers and crew facilities, and laundry operation.

Estimated number of hours of study: 50 hours

Course outcome: upon completion of the course, participants shall be able to:

  • Identify and describe housekeeping positions and organization ;
  • Detail the chemical and cleaning equipment used in housekeeping and describe its appropriate utilization;
  • Be familiar with passengers and crew accommodation facilities;
  • Understand sanitation requirements in housekeeping;
  • Demonstrate the flow of linen in the ship's laundry and be familiar with laundry equipment.

Benefit of the course: the course will make participants more eligible to be recruited by the cruise lines thanks to their competence with the cruise industry housekeeping procedures and onboard organization.

Culinary Arts - 201


Course description: the course is designed to introduce the participants to standard operating procedures and systems in the culinary and food production service of today cruise industry. Emphasis is placed on food production organization, food sanitation, cooking tools and equipment, and basic cooking techniques.

Estimated number of hours of study: 50 hours

Course outcome: upon completion of the course, participants shall be able to:

  • Identify and describe food production positions and organization;
  • Detail the tools and equipment used in the food production and describe their appropriate maintenance and use;
  • Be familiar with entry level basic cooking tehcniques;
  • Understand and implement food sanitation systems and procedures.

Benefit of the course: the course will make participants more eligible to be recruited by the cruise lines thanks to their competence with the cruise industry culinary procedures and onboard organization.

Restaurant & Bar - 301


Course description: the course is designed to introduce the participants to standard operating procedures and systems in the restaurant and bar service of today cruise industry. Emphasis is placed on restaurant and bar organization, food sanitation, restaurant and bar equipment, basic restaurant service procedures and beverage knowledge.

Estimated number of hours of study: 50 hours

Course outcome: upon completion of the course, participants shall be able to:

  • Identify and describe restaurant and bar service positions and organization;
  • Detail the tools and equipment used in the restaurant and bar operation and describe their appropriate maintenance and use;
  • Be familiar with entry level basic restaurant and bar service techniques;
  • Understand and implement restaurant and bar sanitation systems and procedures.
